I'm interested to know the origin of the word spud - in connection with potato.

It's from the Middle English, spudde, for "dagger" which reffered to anything used for digging (related to "spade"). Potatoes grow underground and so are spudded-up for harvest. Hence, they, themselves, became known as "spuds."
